KC and I were invited to a brunch today and needed to bring something. Wanting to make use of items from my garden, I came up with this salad. I used predominantly the cherry type tomatoes, but if I were short on them, I would have used just the regular kind. We grew normal cucumbers and although I used it for this salad, I did remove some of the seeds. Given that I only had one cucumber left, I also augmented with an English cucumber (the long skinny one) because it has less seeds. Here is the recipe:
Dressing:
Just mix it all together first and let it sit.
-2 Cloves garlic
-1/8 tsp salt
-pinch of pepper
-2 tbsp balsamic vinegar
-2 tbsp olive oil
Salad:
– 1/2 cup of feta
– 12 oz tomato – cut into small chunks or circles
– 1 english cucumber
– 1/4 cup diced red onion
– 2 tbsp of fresh, chopped basil
Put all of the vegetables in together first, then add dressing. Fold feta into the mixture and serve. You can serve as a side or on top of greens. Enjoy!
